Set in the Hokkaido Prefecture in Japan, Takasago was established in the late 19th century to produce sake. Because the brewery regularly faces extreme cold conditions with temperatures reaching -15 degrees Celsius, they built an Ice Dome/Igloo Room as a unique brewing method to create clean, pure ultra-premium sake. As the oldest sakagura (sake brewery) in the area, they utilise ancient brewing techniques fused with modern technology. Their produced sake is dry and balanced, with a light flavour that spreads well across the palate. Most of their production is tokutei meishoushu (special designation sake) while a small percentage of it is ginjo-shu (premium sake).
One of Takasago’s star products is the luxurious Ginga Shizuku (Divine Droplets) Junmai Daiginjo, which stands to be the world’s only sake that is drip-pressed in an ice igloo, made from Kamakura Ice.
