Bak Kwa literally means “dried meat” when translated from Hokkien to English, is a Chinese snack almost exclusively eaten in Singapore. It can be likened to Western meat jerky, only with several major differences in its preparation and taste. Bak Kwa’s preparation gives it its unique flavour. Instead of being air-dried in the manner and style of Western meat jerky, marinated strips of meat are grilled over a charcoal barbeque to dry them out. This imparts a caramelised, smoky flavour to the still juicy and moist meat.
While not reserved specifically for festive seasons, Bak Kwa is most widely consumed during the period in and around the Chinese New Year. This delicacy is adored and consumed in copious amounts during this time. Bak Kwa is traditionally made from beef and pork.
