Being the only sake production plant in Sapporo, Japan, Chitosetsuru uses underground water below the Tohiya River running through Sapporo, making it incredibly rich in minerals. Its unique makeup of minerals affects the fermentation process and gives Chitosetsuru its signature deep, dry and refreshing flavour. Each step of brewing honours century old traditions, fermenting Hokkaido grown rice fermented to specific levels before it is distilled to produce Chitosetsuru’s famous sake.
