Inniskillin is a Canadian winery that is known for its ice wine and is credited with helping to grow the local wine industry. Inniskillin’s first winery was founded in 1974 and was located in Niagara-on-the-Lake, Ontario. In 1984, Inniskillin became the first Canadian winery to successfully harvest enough frozen grapes to produce ice wine for commercial purposes. The co-founders’ efforts paid off, as the 1989 Vidal Ice Wine from Inniskillin won the prestigious Grand Prix d'Honneur award at the Vin Expo, France in 1991 and gained the company international recognition.
Like ice wines from other brands, Inniskillin ice wines are sweet and incredibly flavourful, making them the perfect dessert wine for most meals. To harvest the grapes needed to make ice wines, the grape vines have to be frozen at -8 degree Celsius during the frigid winter season in Canada. However, only a small amount of juice can be obtained from the frozen grapes, making the production process especially gruelling.
