Bottega Miabi is a Pinot Noir sparkling wine obtained by white vinification of Pinot Nero grapes. It is made sparkling through the long Charmat method, which enhances its complexity and its sensory profile. This wine and its bottle are the expression of the Japanese decorative technique, called "dyed obi", and of the Italian wine making tradition. It is straw-yellow, with a fine and persistent perlage. The bouquet is complex, elegant and refined, characterized by light and pleasant aromas of crusty bread and yeast with a delicate floral edge at the end. On the palate it is full, well-rounded and velvety, with excellent structure and taste-olfactory persistence. It is characterized by its richness of flavour, balanced acidity and yellow fruit aromas that, in the finish, tend towards sweet almond. Excellent as an aperitif, it goes well with starters, rice dishes, sushi, raw or cooked fish (especially shellfish), vegetarian dishes, white meats, cheeses and desserts as well.
