Bottega Stardust is a Prosecco DOC, obtained by the vinification of Glera grapes, grown on the Treviso hills,, close to the Venetian Prealps. The wide temperature range stimulates the production of aromatic compounds, maintains a good level of acidity in the grape and improves the polyphenolic composition.
The ages of the vines vary and the old vines only manage to produce a small number of grapes, and so Stardust is produced every year in a limited quantity. The grapes are harvested by hand, and strictly selected, then softly pressed in the winery. The must is stored in cuve close at low temperature to preserve its freshness and its varietal aromas.
Following fermentation in tank at controlled temperature for 40 days, the must is left in contact with the lees: the dead yeast release some important compounds which enhance the body and the flavor of the wine. Color is brilliant, with a rich, creamy and persistent foam and fine perlage.
The bouquet is typical of Prosecco: fruity (Golden apple, pear, peach, citrus) and floral (acacia, wisteria, lily of the valley and slight final hint of roses). The taste is elegant, well balanced, persistent with pleasant mineral notes. It goes particularly well with refined dishes of poultry, shellfish (excellent with lobster). Service temperature 4.5°C
