Olive Leaf Gin is our new savoury gin, five delicious years in the making. It’s textural, bright and perfect for a Martini or Gintonic. We’ve used three types of cold-pressed extra virgin olive oil and olive leaf tea from the world-class groves of Victoria's Cobram Estate. Botanicals like rosemary and bay leaf transport you to the Mediterranean (even though they're from Cam’s garden), while native macadamia nuts and lemon myrtle make the gin distinctly modern Australian.

Palate:
The palate is savory and viscous, with juniper well integrated with notes of sage, expressed lemon peels, quinine, white pepper, and coriander. The presence of olives is felt most strongly on the finish, where vegetal and herbal notes reign alongside a final flash of vibrant citrus.

Lemon zest and violets open a bright nose, with potpourri, lavender, ruby red grapefruit, and a touch of savory salinity.

Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.<br>The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini – Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired gin & tonic, with rosemary and lemon!
