Izumibashi's estate grown Rakufumai rice, polished ever so carefully down to 35% is used to develop this rich and highly fragrant Kimoto, tropical fruits and fresh cut herbs waft followed by a palate of luscious overflowing umami, a gentle acidity and full bodied sweetness, creating a great impact.

Background:
Izumibashi is the only brewery who uses Rakufumai, a rice varietal cultivated in Ebina city, Kanagawa. This premium sake offers great clarity and a complex umami profile, which can only be developed through the ancient Kimoto brewing technique. Using the traditional fune, the extraction is delicate and gentle & this sake is bottled only with the premium nakadori portion of the press.
