Umaji village in Kochi Prefecture is renowed for cultivating some of Japan's best Yuzu, given its climate. Yuzu for this liqueur is farmed organically without pesticides and its juice, hand squeezed to avoid over extraction and bitterness. Lovely citrus aromatics, bright and lively - akin to a drop of sunshine, (Hi no Shizuku) on your palate.
