Turn lychees into creepy eyeballs in this cocktail recipe while enjoying that punch from any full-body sake

Ingredients to make Eyeballed Lychee Sake

  1. 1 cup of sake (For that rich sake flavour, go for the undiluted Saito Junmai Ginjo Genshu 17.5% or Saito Ginjo 12Yo Aged 16.5%.)

  2. 1 can of lychees in syrup

  3. 1 packet of blueberries

  4. Strawberry jam

  5. 6 to 8 dried roselle flowers

  6. ¾ cups of sugar

  7. 2 cups of water

  8. Ice cubes

How to make Eyeballed Lychee Sake

  • To prepare the roselle syrup, mix the water and sugar in a saucepan and bring to a boil. Drop in the roselle flowers and stir. Reduce the heat and let the mixture simmer for about three minutes until you achieve a slightly thickened consistency. Strain the mixture through a measuring cup and keep in the fridge to cool.

  • Separate the lychee from the syrup, leaving the latter in a jug for use later. Pat the lychees dry and keep aside.

  • Mix the sake and lychee syrup in equal portions.

  • Once lychees are dry, add strawberry jam inside the lychee and around the pits. Then, place a blueberry inside each lychee.

  • Fill ¼ of a cocktail glass with the roselle syrup and add ice cubes.

  • Pour in the lychee-sake mixture over a spoon to create an ombre effect. The mixture should cover up to ¾ of the glass.

  • Place the lychee eyeballs on top of the ice cubes.

  • Serve.

Scare your way in the spirit of Halloween!

Of course, the list is endless – turn up the nightmare on whiskey street by combining single malt Scotch favourites like Twenty Third Street Hybrid Whiskey with rum and coffee liqueur. Or, surprise your guests with a spiced wine concoction, starting with the 2020 Sierra Foothills Old Vine by Zinfandel, and deliver that fiery punch with a dash of cinnamon. Pair the blood-red Sangria with a white wine alternative, combined with limoncello and apple juice, and not forgetting that green colouring for that bewitching Halloween hue.
