The number 88 symbolises good fortune. The 88 Vineyards Sauvignon Blanc has bright tropical fruit avours, crisp acidity and subtle minerality.
THE VINEYARDS
The vineyards are found in a variation in meso-climates, exposed hills and sheltered valleys with soils from granite, sandstone and sand. Grapes are picked from a selection of these di erent wards in the Western Cape.
THE WINEMAKING
Grapes were harvested at optimal ripeness between 21–22 ° balling and picked in the early morning hours to ensure cool arrived at the cellar. Dry ice and sulphur were used to protect the grapes from oxidation during transport. Skin contact was given for two hours and thereafter the free-run juice was separated from the press juice. Reductive winemaking practises were followed to retain optimal flavour and complexity.
