Working with leading Irish distillers, for this project specifically, Noel Sweeney (ex-Master Distiller Cooley / Powerscourt Distillery), a bold single malt was sourced that could take our unique finishing style. Under the discerning eye of Lambay’s Master Blender, Yonael Bernard, the whiskey is finished on Lambay Island for the final 2 years in French oak Camus Cognac casks. <br>‘Each cask receives the maximum benefit of the Island’s unique micro-climate of sea aerosols and pollens.
