Dewar’s 12 Year Old Scotch is different from other whiskies: it is double aged for extra smoothness. In this special process, rare malt and grain whiskies are aged separately in oak casks, then blended and aged again once more.
The second stage is where the ‘magic’ happens – different whiskies fuse and ‘marry’ to produce luscious, velvety smoothness. To celebrate 125 years of double ageing, marrying is now conducted in ‘1st fill bourbon’ casks: Oak casks previously used to age bourbon whisky in America are brought to Scotland. 1st fill means we use them first and the oak retains far more flavour, releasing richer vanilla, dried fruit and citrus notes into the whisky.
