The sake rice used is 100% Niigata's unique sake-brewing rice, Koshitanrei, grown locally in the Shimodaeguchi district of Sanjo City. The faint sweetness and soft acidity create an exquisite harmony that goes well with meat dishes and Chinese cuisine.
Rei Koshitan has 15 years of trial and error. This is a new variety developed in Niigata by crossbreeding "Yamada Nishiki" from Hyogo Prefecture and "Gohyakumangoku" from Niigata Prefecture to the father.
Yamada Nishiki is cultivated in western Japan such as Hyogo Prefecture and has been used for high-end sake. Gohyakumangoku was developed in Niigata Prefecture and has supported Niigata Sake. Gohyakumangoku has a light and refreshing aftertaste. Yamada Nishiki has a reputation for its rich and full flavor. Koshitanrei takes over these two strengths.
